Puff Pastry Salmon

"An excellent blend of salmon, pesto, spinach and puff pastry. It tastes great and only takes a few minutes to put it all together!"

Ingredients

2 (12 ounce) skinless, boneless salmon fillets

seasoned salt to taste

1/2 teaspoon garlic powder

1 teaspoon onion powder

1 (17.25 ounce) package frozen puff pastry, thawed

1/3 cup pesto

1 (6 ounce) package spinach leaves

Directions 

Preheat oven to 375 degrees F (190 degrees C).

Season the salmon fillets with salt, garlic powder, and onion powder. Divide 1/2 of the spinach between two sheets of puff pastry, and mound in the center. Place a salmon fillet on top of each mound of spinach. Spread the pesto on the salmon fillets, and top with remaining spinach. Moisten the edges of the puff pastry with water, fold to the center, and seal the seams.

Bake in preheated oven for 20 to 25 minutes until the pastry is puffed and golden, and the salmon has cooked all the way through.

Smoked Salmon Dill Eggs Benedict

"Despite the absence of the traditional hollandaise sauce, this smoked salmon eggs benedict is really, really good."

Ingredients

1/4 cup butter, softened

2 tablespoons fresh dill

1 teaspoon lemon zest

1 pinch cayenne pepper

salt and ground black pepper to taste

1 teaspoon white vinegar

1 pinch salt 

4 eggs

2 English muffins, split and toasted

4 ounces sliced smoked salmon

1 pinch cayenne pepper

salt and ground black pepper to taste

4 small fresh dill sprigs

Directions

Stir butter, dill, lemon zest, cayenne pepper, salt, and black pepper in a bowl until combined. Set aside.

Fill a large saucepan with 2 to 3 inches of water and bring to a boil over high heat. Reduce heat to medium-low, pour in vinegar and a pinch of salt. Crack an egg into a bowl then gently slip the egg into the water. Repeat with remaining eggs. Poach eggs until whites are firm and yolks have thickened but are not hard, 4 to 6 minutes. Remove eggs from water with a slotted spoon, dab on a kitchen towel to remove excess water, then transfer to a warm plate.

Generously spread each English muffin half with dill butter. Top with a layer of smoked salmon, then 1 poached egg. Season with cayenne pepper, salt, and black pepper to taste. Garnish with a dill sprig and serve.

Salmon with Lemon and Dill

"This is a wonderful (and easy) recipe I got from my Aunt. The flavors of lemon and dill really complement the fish. I like to use wild Alaskan salmon for this recipe, but any salmon will work. I usually don't measure, so these are all estimates. Play with the ingredients to suit your own tastes!"

Ingredients

1 pound salmon fillets

1/4 cup butter, melted

5 tablespoons lemon juice

1 tablespoon dried dill weed

1/4 teaspoon garlic powder

sea salt to taste

freshly ground black pepper to taste

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.

Place salmon in the baking dish. Mix the butter and lemon juice in a small bowl, and drizzle over the salmon. Season with dill, garlic powder, sea salt, and pepper.

Bake 25 minutes in the preheated oven, or until salmon is easily flaked with a fork.

Marinated Wild Salmon

"A delicious, healthy lemon-garlic marinade for salmon with cilantro and red chili flakes. Marinate at least 6 hours. Broil in the oven or grill 7 to 8 minutes per side."

Ingredients

4 salmon fillets

salt and pepper to taste

1 tablespoon onion powder

1 teaspoon crushed red pepper flakes

1/4 cup olive oil

1/4 cup fresh lemon juice

4 cloves garlic, minced

3 tablespoons white balsamic vinegar

2 tablespoons white sugar

2 tablespoons chopped green onions

2 tablespoons chopped cilantro

Directions

Season fillets with salt and pepper, onion powder, and red pepper flakes. Set aside in a baking dish.

In a medium bowl, mix together olive oil, lemon juice, garlic, balsamic vinegar, sugar, green onions, and cilantro. Pour marinade over salmon; cover, and refrigerate overnight, or at least 6 hours.

Preheat oven to 450 degrees F (230 degrees C).

Arrange salmon on a broiling sheet. Place in a preheated oven, and bake for 5 minutes. Increase heat to 500 degrees F (260 degrees C), turn fillets, and broil 5 minutes more.

Yummy Lemon Salmon Burgers

"A quick, delicious and nutritious way of serving up canned salmon. You can enjoy this with or without the dressing, in a hamburger bun, or with a salad."

Ingredients For Burger:

1 (16 ounce) can salmon, drained and flaked

2 eggs

1/4 cup chopped fresh parsley

2 tablespoons finely chopped onion

1/4 cup Italian seasoned dry bread crumbs

2 tablespoons lemon juice 

1/2 teaspoon dried basil

1 pinch red pepper flakes

1 tablespoon vegetable oil

For Dressing:

2 tablespoons light mayonnaise

1 tablespoon lemon juice

1 pinch dried basil

Directions

In a medium bowl, mix together the salmon, eggs, parsley, onion, breadcrumbs, 2 tablespoons of lemon juice, 1/2 teaspoon of basil, and red pepper flakes. Form into 6 firmly packed patties, about 1/2 inch thick.

Heat the oil in a large skillet over medium heat. When the oil is hot, add the patties, and cook for 4 minutes per side, or until nicely browned.

In a small bowl, mix together the mayonnaise, 1 tablespoon of lemon juice and a pinch of basil. Use as a sauce for your patties.

Grilled Salmon with Avocado Dip

"This dip fits perfectly with grilled salmon. Serve with rice. Greek style yogurt is a bit more sour than regular plain yogurt."

Ingredients

2 avocados - peeled, pitted and diced

2 cloves garlic, peeled and minced

3 tablespoons Greek-style yogurt

1 tablespoon fresh lemon juice

salt and pepper to taste

2 pounds salmon steaks

2 teaspoons dried dill weed

2 teaspoons lemon pepper

salt to taste

Directions

Preheat an outdoor grill for high heat, and lightly oil grate.

In a medium bowl, mash together avocados, garlic, yogurt, and lemon juice. Season with salt and pepper.

Rub salmon with dill, lemon pepper, and salt. Place on the prepared grill, and cook 15 minutes, turning once, until easily flaked with a fork. Serve with the avocado mixture.
